Tofu Masala – A Flavorful Vegan Delight

Ingredients

  • Tofu (सोया पनीर) – 200 grams
  • Onions (प्याज) – 2 small
  • Garlic (लहसुन) – 4-5 cloves
  • Red Spice (लाल मिर्च) – A dash
  • Green Chilies (हरी मिर्च) – 2 small
  • Turmeric (हल्दी) – A pinch
  • Coriander Powder (धनिया पाउडर) – 1 Tsp
  • Mango Powder (अमचूर पाउडर) – 1 Tsp
  • Roasted Cumin Powder (भुना जीरा पाउडर) – 1 Tsp
  • Black Pepper (काली मिर्च) – 1/2 Tsp
  • Salt (नमक) – 1/2 Tsp
  • Lemon Juice (नींबू) – 1 Tbsp
  • Cooking vegetable Oil (वनस्पति तेल) – 3 Tbsp
  • Fresh Coriander Leaves for garnishing (धनिया)

Method

Step 1 – Tofu Marination

To begin, gently squeeze the fresh tofu to eliminate excess moisture and then cut the squeezed tofu into bite-sized cubes. In a bowl, combine one tablespoon of oil with the tofu cubes. Add coriander powder, roasted cumin powder, mango powder, turmeric, red spice, black pepper, and salt to the bowl. Thoroughly coat the tofu cubes with the spice mixture and set it aside for marination, allowing it to soak up the flavors. Ideally, marinate for 30 minutes to 2 hours, or for an even richer taste, marinate overnight in the refrigerator, but not exceeding 18 hours.

Step 2 – Onion Preparation

For this step, finely chop the onions, garlic, and green chilies. Place the sliced ingredients in a bowl and season them with a pinch of salt, black pepper, and roasted cumin powder and then give it a good mix and let it sit for 5-7 minutes to develop flavors.

Step 3 – Sautéing

Heat one tablespoon of oil in a skillet (tava) and add the marinated tofu cubes. Maintain a low to medium heat and gently sauté the tofu for 10-12 minutes. Ensure the tofu doesn’t stick to the skillet. Add more oil if necessary to prevent sticking. Turn the tofu cubes to achieve a light golden color on all sides. Once the tofu achieves a delicate golden hue, introduce the prepared onion mixture into the skillet. Avoid overcooking the tofu; a gentle golden sear is the desired outcome. Mix the onion mixture with the tofu over low heat, stirring for 45-60 seconds.

Step 4 – Plating

To complete this delightful dish, transfer the entire medley to a serving dish. Drizzle lemon juice over the mixture and gently combine. Finally, garnish your creamy tofu masala with fresh coriander leaves. It’s now ready to serve!
